Spinach Leaves and Feta Salad
Ingredients:

Fresh spinach leaves |

Virgin Olive oil |
| 4 tbsp. |
White wine vinegar |
| 4 tbsp. |
Lemon juice |
| 1 tsp. |
Ground cinnamon |

Seedless cucumber, sliced |

1 cup |
Cherry tomatoes, cut into halves |
| 1/3 tsp. |
Dry mustard |
| 1 lb. |
Feta cheese, crumbled |
| pinches |
Salt and Freshly ground pepper to taste |

Green onions, chopped |
Procedure:
Remove the stems from spinach leaves, wash thoroughly and drain leaves.
Then cut into 1inch wide strips, and place in a salad
bowl.
Mix together the oil, vinegar, lemon juice, cinnamon, mustard, salt, and pepper; pour half the dressing
over the spinach and mix well.
Slice thinly cucumbers and arrange in a ring across the top with the cherry tomatoes.
Sprinkle with in the cheese and onions.
Pour remaining dressing over the salad.
Serve 6 people.
